I make these apple muesli muffins to have for a quick breakfast when I'm in a rush. Sometimes life gets in the way and we can't sit down to eat a filling breakfast so that's when I have these muffins in the freezer ready to quickly defrost and eat as I'm running out the door so that I'm at least eating something. Then when I'm at work I can eat something a bit more to make sure I last until lunch time !

I used a recipe from the live lighter campaign and didn't add any dried fruit because I don't like it too sweet.

Who else loves eating a creamy bowl of oats for breakfast in this cold weather? So comforting and nutritious!

This bowl of traditional contains soluble fibre to keep us full, help prevent high cholesterol and heart disease and keep our digestive system healthy and happy. Not to mention the protein it provides to also help keep us full, help control blood sugar levels and help our constantly regenerating muscles ! I like to top mine with banana but any fruit would be just as delicious!
